The characteristics and distribution of the carotenoid pattern were analysed in the peel of maturing ¢¥Fuyu¢¥ persimmon fruit during cold and CA storage. 1fie major carotenoid pigments found in the peel of fruit were as follows; ¥â-carotene (22.4%), cryptoxanthin (23.4%), lutein (42.7%), isolutein(2.7%), violaxanthin (3.0%), and zeaxanthin (2.7%). Other pigments like mutatochrome, neoxanthin, antheraxanthin, and neochrome were also present as minor pigments. During cold and CA storage ¥â-carotene (pro-vitamin A) and cryptoxanthin increased while lutein sharply reduced. After CA storage relatively little amounts of violaxanthin was accumulated compared to cold storage. These results suggest that ripening may be delayed by CA treatments.
